Marching in Step
with Joseph Decuis, The Preservation Hall Jazz Band, and FAME (Foundation for the Art & Music in Elementary Education)
On Friday, March 9th, Joseph Decuis is honored to host dinner for the Preservation Hall Jazz Band. These fine jazz musicians from New Orleans are coming to Fort Wayne as the special guest performer for FAME – Foundation for Art & Music in Elementary Education. With our Creole ancestry (and our awesome gumbo) Joseph Decuis provides the perfect venue for these venerable guests. JOIN US! During the dinner hours the band plans to “play for their supper” by entertaining us with some of their jazzy solos and spicy duets. In their honor, we are featuring a special three-course Creole dinner for $50 to accompany the syncopated rhythms of New Orleans. (The regular dinner menu is also available.) Seating is limited so make your reservations soon... (...More...)
Sweet Talk
with Megan Kosiak
I know, I know. This is supposed to be Sweet Talk, but this month it just has to be Soup Talk. Must be the weather. Perhaps it was that pesky blizzard, or that pea soup fog we had, but soup’s been on my mind. What you may not know is that in addition to making the desserts here at Joseph Decuis, I also make the majority of the soups and gumbo.
Soup is such wonderful food and it is a very satisfying culinary experience. The simplest ingredients combined with a little care and attention can create a soothing bowl of comfort for any weather. One of the first soups I learned to make is the tomato soup recipe that follows. It is simple and utilizes pantry ingredients that almost everyone has on hand. Variations of this recipe can be found in any Italian cookbook. (...More...)
From the Kitchen
with Aaron Butts
Oyster Week March 20-24 Casanova ate fifty of them before breakfast. For added strength, Napoleon consumed them before going into battle. They are the most ancient of foods still eaten today; their fossils date back 520 million years. Loved by the rich and the poor, the oyster has a history that predates dinosaurs and mankind.
One of my favorite events of the year is just around the corner: our Joseph Decuis Oyster Celebration. Every year in March, we research the freshest oysters available, then select and ship in a half-dozen different varieties of oysters from all around the country. They are served either cooked with some of our favorite preparations or, of course, raw on the half shell with a selection of sauces. (...More...)

From the Cellar
with Carmen McGee
Joseph Decuis was created in the vein of New Orleans and the image of freshly shucked oysters come front & center when you think of that famous city.
Our owners are serious connoisseurs of the raw, glistening wonders of the sea and they never miss a chance to slurp back a few dozen at The Acme Oyster Bar when in the French Quarter.
Every year at the restaurant, we pay homage to the oyster by designating a few precious days “Oyster Week.” During the third week of March, the 20th through the 24th, we will be immersed in the much-anticipated arrival of hundreds of deliciously fresh bivalves. (Warning: Inevitably we get so carried away with Oyster Week that it tends to spill over into the next week, too.) (...More...)
