Fishing for Compliments

In our modern age world of ever-shrinking boundaries, it shouldn’t come as a surprise that our food isn’t always local – or even where we think it’s from. In a recent run through the grocery, I found cucumbers from Canada, pineapple from Costa Rica, tomatoes from Mexico and shrimp from Bangladesh (and this was only what I could read without my glasses on.) The reason I checked was that not long ago, we read our package of crawfish tails to see where in Louisiana it was from and found it was actually from China. We were shocked. The package had a cute little label with a French-Creole type name on it and yet it was from the other side of the world. We felt cheated and deceived. (...More...)

Back home again...

I am back to work with new inspiration and a rejuvenated spirit. As you may already know, I spent a month working at The Fat Duck in the village of Bray, located just outside London. The experience was like a culinary boot camp.

Working at The Fat Duck was a great experience for me. I was introduced to things I’ve never seen before, picked up some new tricks along the way and was reminded of the importance of detail and perfection. If a dish or ingredient wasn’t right, it didn’t go to the table.

Soup Talk

While the weather is getting downright hot, soup nevertheless remains popular, perhaps because it can be made ahead and reheated with little fuss and unnecessary heating of the kitchen. Soup and a salad is a nice light dinner even in the heat of summer.

This month I’d like to share a recipe for a wonderful soup that highlights the best of the season: wild mushrooms and corn.

Hot off the Grill!
News from the Emporium at Joseph Decuis

I think we can now safely say that spring has finally arrived here in Indiana and you know what that means? You guessed it; “Grill Season” is now underway! Outdoor living and entertaining is a way of life for us Hoosiers fresh out of hibernation. Also when you think of grill season, the natural association is Fathers Day – just around the corner.

So if you are headed to the lake, your back yard, or pondering on a gift for Dad, think of the Emporium first. The Emporium at Joseph Decuis has some great grill items as well as the Kobe beef to cook with them.

Down on the Farm

It’s spring and our farm is bustling with activity. We’re harvesting our first generation of American Kobe Beef, it’s calving season, and as of today’s date we have 25 beautiful calves with 15 more to be born; our chickens are maturing for egg production and it looks like we are only two weeks away from harvesting our first hay crop.

Joseph Decuis has its own farm? I imagine that you may wonder why. The answer is both simple and complicated. Simply, we are on a mission to control the quality of our products

Of Special Note...

Fresh Bread Fridays
Due to popular demand – we are offering our fresh baked baguettes on Fridays. They will be available by noon every Friday at the Emporium. Stop in and pick up a couple for the weekend. They are great sliced and grilled on the barbecue with a little olive oil, use them for sandwiches (my favorite) or just tear and eat at the table with dinner. Once the Roanoke Farmers Market opens this summer, they will be available on Saturdays as well.
